Delicious and healthy, the "Flame Drunken Goose" is a special delicacy, typical of the Baisha Li autonomous county of central Hainan.

It is something that you will certainly want to order for a meal during your visit to the island, whether you're staying in Haikou or another area.

The base of this dish is the Nancha Goose, a locally raised exquisite breed of bird, with fatty, yet nutritious and smooth meat.

Typically, the goose is prepared with red onions, garlic, bay leaves, cinnamon and ginger, among other ingredients – releasing their fragrances into the meat.

The piece resistance is the pouring of brewed rice wine over the dish which bursts into flames.

As soon as its cooked, it exhales an irresistible perfume you’ll easily sense coming from one of the several local restaurants offering it. Try to ask for it to be cooked in front of you, it will be a gastronomic vision.
